Christmas Dinner
We thought we were going to get to be in Vail, CO this Christmas to see our little nephew, Bear’s, first Christmas. Unfortunately for us, that’s not happening this year. Too many trips and too many deadlines for both Sean and me. And Sean’s sister assured us that we should wait until the weather is better and it’s easier to get to.
So, now, we are spending a cozy Christmas at home, just the two of us and our brood of animals. Something that always crosses my mind in scenarios like this is…how much does one cook when there’s only two of you? I want it to be grand and wonderful. Traditions are so important to me and even though we don’t have kids, I don’t want to lose that Christmas magic.
What do the rest of you make when it’s going to be a small Christmas? Here’s the menu I’ve come up with:
For breakfast – omelets (Because, why not?)
For lunch – Kale salad and a cheese/meat plate
For dinner – (and this is the big one)
Mulled Wine (Recipe here)
Roasted Sweet Potatoes, Brussel Sprouts, and Carrots
Pan Seared Asparagus with Feta and Cranberries
Mashed Potatoes (because no holiday meal is complete without them!)
Slow Cooker Cranberry Glazed Turkey Breasts (Recipe Here) – It just doesn’t make sense to make a whole turkey for only two of us! Also, I’m obsessed with my crock pot =)
And for Dessert, I’m thinking maybe an apple spice cake. Or something along those lines….
